MANGO JAM
Ingredients

1kg Mango fleshed diced small

250ml approx water

6 green cardamom pods split (in muslin bag)
- 1kg jam sugar (for firmer set) or granulated sugar
Method

Peel & dice mango flesh. Cook in pan with water and parcel of cardamom pods.

Bring to boil & simmer until flesh is soft and cooked (approx 30 mins). If slow to cook mash out lumps with a potato masher to make a smooth paste.

If it begins to stick add a very small quantity of water and continue cooking.

Remove bag of seeds and squeeze to remove all liquid.

Add the sugar and bring to the boil.

Boil until a set has been obtained.

Cool slightly and then pour into sterilised jars and seal.
